Hello sweet readers! How is your summer going? Has it been filled with fun and relaxation?
I’ve been negligent where the “party” part of my blog is concerned so I thought I’d share a recent menu for a very simple summer barbecue we hosted earlier this month. When I say simple well, that might be an understatement.
Menu
Appetizer – we prepared a simple cheese board with crackers, almonds and a couple of cheeses we enjoy
Main Course – Grilled Santa Maria Tri Tip
Orzo Salad
Dessert – Fleur de Sel Chocolate Chip Cookies with Vanilla Ice Cream
Super simple. Below is the recipe for the orzo salad. The Tri Tip we used came from Costco: Bailey’s Pre-Marinated Tri Tip. I adapted the orzo recipe from Ina Garten’s recipe for Roasted Shrimp & Orzo. I knew I wanted to prepare the Santa Maria Tri Tip so I didn’t need the shrimp. If you would like to see her original recipe it can be found HERE. The chocolate chip cookie recipe is Nestle’s Toll House recipe with 2 changes. I used Ghiradelli Bitter Sweet Chocolate Chips and before baking I sprinkled the tiniest pinch of flaked fleur de sel. The cookies were a hit and our friends thought it was some fancy new recipe.
We enjoyed appetizers under the trees and when it began to cool down we moved to the dining room for the dinner and dessert.

Hi Sheila, The orzo salad is super easy and you can add ingredients you love. I added roasted asparagus and cut it into bite sized pieces but almost any summer vegetable works. xo, Karen

CD, I’ve always maintained that while summer meals sound easier, the whole process of entertaining (which I truly enjoy) is way more work. You have to have your garden in company ready mode, windows have to be sparkling and on top of that you have to clean and cook! LOL This make ahead meal was pretty painless though. xo, Karen

Vicki, Yes, I made the orzo salad the day before, but I added the parsley and mixed in the roasted asparagus just before the guests arrived. I also recommend that the orzo salad sits out an hour or so before serving. It isn’t as flavorful when it’s icy cold. (I know this because I ate leftovers) 🙂 xo, Karen

D’Arcy, Fortunately Mr. B. doesn’t mind washing windows (odd because he doesn’t like to do many of the household chores) and he does a very good job. He has to be asked because he doesn’t always notice the dust and water spots, but he’s generally happy to oblige! Want me to send him up your way? =) Karen

Constance, That’s a good idea, maybe even use the vanilla bean paste which makes the flavor shine! We freeze them when I bake so that we aren’t as tempted to devour them all within 3 days! Karen

Hi Maria, The think about this salad, at least for me, is you can assemble it the day before and then let it sit at room temp for an hour or so before serving. Easy is always good during the warm summer months. 🙂 Enjoy your weekend. Karen

I so wish you a creative break filled with strengthening for the next attempt at making something that you are pleased with. This particular orzo recipe is very fresh tasting, not at all heavy or rich…ideal for summer.
I’m trying to cherish these last several weeks of dining al fresco and the longer days. 🙂
